I have recently been through this learning curve. Make sure you are close hauled and have a little momentum. Gently turn into the tack, and I roll it just a little. Let the sheet go when head to wind. Keep the rudders turned through the tack, and as mentioned, let the main sheet go as she comes around. Over tack, don't get greedy. Bear off to gain speed then sheet in and come up.
Learn to back wind. My thought is get on the side of the boat you want to be on and push everything away. Push the tiller away, push the boom away, way out there. Then I watch the rudders. Once I stop moving backwards and I am pointed in the right direction, reverse the rudders and sheet in carefully. Hope that helps.
