I've tacked up the inlet out to open ocean alongside monohauls frequently, and typically, I leave them in my wake.
So, no, tacking is not slower in a cat.
The stronger the wind the tighter one can close haul. I like going fast, so I rather not tack as tight so I get more speed.
It's all in the sail shape. The more taunt the sail, the closer to wind you can sail. However, if the wind is weak, a taunt sail will not catch any wind.
"Coming around" just takes practise. I've had my WAVE out at least 150 times, and I still get stalled and locked from time to time, usually by a swirling wind pocket up against the jetty or a good sized wave stalling me out. In those cases, flipping the rudders in the opposite direction will usually "back" be into the turn correctly so I am catching wind again.
