I have a Pro angler 12 with an after market leaning tower behind the seat (standNfish), my primary use is fishing but I would like to sail to my honey holes so I would like to use both.
The problem I'm having is the best way to rig the sail line and the hardware needed. I'm thinking I may have to put some kind of pivoting block or eye bolt at the top of the tower then use some kind of fair leads to string it to the side of me, where the line will go into a spinlock or a cam cleat. Admittedly I've never sailed, so my familiarity with this hardware is limited.

Any thoughts or suggestions are welcome and appreciated.

No special hardware needed. You will need to lay the standnfish out of the way to sail is all. I sail my PA12 and it works well.The control rope goes from the back of the sail thru the metal loop on the back of the boat. Then up the side to your hand. The directions that come with the hobie sail explains it very well.
It is especially nice when you want to cross a lake or make a long run.
You won't be sorry to get a sail and it is almost as much fun as fishing.
