I was thinking of replacing that hatch bungee hold down piece with a curved plastic J hook piece. Like the ones in Dog's third and fourth photos. I think it will function just as the original as a place to hold the hatch bungee, and the curved part will help with the spray shield. If it gets yanked loose too often, it wouldn't be a big deal to drill a small hole through the J part to add a cable tie, or maybe some other easily removable pin so that the hatch bungee is easily accessible.

If the J hook isn't big enough to hold it all, I was thinking I could just stack it on top of the existing Hobie hatch bungee holder and use a longer bolt..

does that make sense?

Running the loop of cord under the hatch hold down seems to work well. I just came up with an idea to try a button wire-tied to the Sprayskirt on each side to put the loop over as a quick connect/disconnect at the hatch. With the bungee sitting above it while in use, it should be very secure.

On the bungee being pulled off, unlikely. But even if it did, you still have the bungee on the other side holding it down. With the loops under the hatch hold, no forces against the bungee to unhook. If you are worried about extreme wind or wave forces, think about adding nuts on the bolts on the hatch holds as they are just screwed into plastic (no hardware).

If the button works, the only permanent attachments left is a wire-tie on the right at the sheetline pulley, and a wire-tie on the left side to the aka crossbar mount.

I am assuming you are familiar with the quick release type wire ties ( I still think of them as Ty-Wraps), the reusable ones with the tab releases.

Now is that the same for a TI? Or are the demsions different?

Sorry, somehow I missed your post.

The TI Sprayskirts are 4 inches shorter that the AI Sprayskirts. Otherwise, very similar in cut.
