I use a stake out pole attached to a paddle leash and sit.

My 10 ft push pole is staked out on one end. I remove the mirage drive when shallow, and stake out through the hole when I spot fish. I also use a trolley when I want to stakeout deeper.

I live in Texas too and yes the wind has been a killer. I like a little wind though. Fishing wind blow points by just pointing my nose in to the wind and peddling very slow works great.
